Homemade Blueberry Muffins

My hubby has been asking for blueberry muffins so when I shopped last week I made sure to buy some frozen blueberries.

Yesterday I found this recipe here for basic blueberry muffins and whipped some up.

The only substitution I made was 1/4 cup applesauce instead of oil. Next time I will probably use 3/4 cup sugar instead of 1/2 cup. They are perfectly fine with the half cup but I think they could be just a little sweeter.

On days that I am busy instead of actually scooping out the batter into a muffin tin I will pour it all into a greased square pan and then cut into bars. This recipe made 16 square bars.
