Cooking with Jonah: Spiced Roast Chicken

Monday night was Jonah's turn to cook and we were very pressed for time. They get off the bus around 3:20 and she had to be a softball practice by 5:00. During that time she had to practice her trumpet then get dinner ready. So I stepped in and helped a little. A few things were changed to save on time.

She made Spiced Roast Chicken Breast and I made the onions and potatoes.

Here are the ingredients:
* 2 chicken breast halves
* 1 teaspoon chili powder (we used red pepper flakes instead)
* 1/4 teaspoon ground cumin
* 1/4 teaspoon ground coriander
* 1/4 teaspoon black pepper
* 1/8 teaspoon ground cinnamon
* 1 teaspoon salt
* 1 1/2 tablespoons vegetable oil
* 3 tablespoons water



She cut up all the chicken into smaller strips to save on cooking time. Afterwards she mixed all the spices with the oil and rubbed it over the pieces of chicken.


Then she added the rest of the oil to the pot and browned up the meat. Then she transferred the meat to a glass pan and put it in the oven on 450 for about 15 minutes.


Then we served it with some yummy onions and potatoes.


The chicken was quick and easy and the spices were really tasty. The meal was yummy and we barely got done in enough time to get to softball practice.

We will make chicken like this again.
