CVS and Walgreens, Where are the Deals?

On the way to church this morning we stopped to get my Sunday Papers and I began perusing the weekly ads. I looked through the CVS and Walgreens ads then I looked once again. Where are the deals? Seriously did CVS have too many deals last week to give us any this week?

CVS has zero straight out freebies and Walgreens only has one. Right now I am thinking I may not be heading to either store this week unless some one reports any hidden deals.

Where Does the Time Go?


Long long ago in a land so far away lived a mommy a daddy and two lovely little girls. Emeri and Jonah were the sweetest (most of the time) little girls. They played with dolls, watched silly cartoons and the danced and laughed the days away (occasionally). Life was good and mommy never had to worry about school or boys or any of the hard things that preteen girls endure. Instead she read stories, braided hair and spent many an afternoon watching Caillou or the Big Comfy Couch.

Somewhere along the way these sweet little girls gave up the dolls and cartoons, well at least most of them. They have turned into amazing young ladies and I am so proud of them. Next year Emeri will be going into 8th grade and Jonah will be in 6th. Some days the thought of them growing up makes me sad and I really wish I could turn back the time and make them toddlers again.

Alas I know I cannot. I can however cherish the moments that we have in the here and now. I thank God everyday for the priveledge of having two wonderful daughters.


Emeri and Jonah at this years Jr High Honors Program. Emeri was awarded for having higher than a 4.5 avg for all 3 years of Jr High and Jonah was awarded for having higher than a 4.5 avg for her first year of Jr High. Mommy and Daddy are proud! :)

BK Mocha Joe Vs. McD's McCafe Iced Mocha

I am really a fan of iced coffee! I don't have it very often but I enjoy pretty much anything they offer at Starbucks and Gloria Jeans.

I recently tried both the BK Mocha Joe and McDonald's McCafe Iced Mocha.

I tried that Mcd's version first. It was about three weeks ago when hubby and I decided to run through the drive-thru and get an un-sweet iced tea. As usual the girl running the drive-thru asked if we wanted to try one of the new McCafe iced coffees and that day I decided I would.

I got the McCafe Iced Mocha and to be honest it was terrible! So terrible in fact that I took a few sips and ended up throwing the rest of it away. It was extremely strong and just didn't taste good at all. I have had a few people tell me they loved it and a few others tell me it was terrible so I am not sure it it was a matter of taste of the product or the person making it!? So far I have not attempted to try another one.





The following week I was out with my mom and sister and we went through the Burger King drive-thru. My sister was raving about the BK Mocha Joe so I figured "what the heck", I will give it a try.




I loved the Mocha Joe! It was a great balance of coffee and sweetness. I enjoyed it so much that it didn't last very long. I have to say I was quite sad that it just didn't last long enough.

Last Weeks of School = Insanity

These last few weeks of school have just been crazy around here!

Between all the endless end of the year trips, summer sports and starting the musical my girls have been needing more and more money nearly everyday. Not to mention that try as I might I am struggling daily remembering what is going on around here.

When I was in school we had one big end of the year field trip, the older I got the more elaborate the trip was. My daughters on the other hand get a few trips.

Never get any detentions in school = trip to minor league ball game
Join 7th/8th grade choir or band = trip to Holiday World
Each class also gets a small end of the year field trip

Not to mention that projects are top priority for my 5th grader right now. Last week it was the diorama for Hatchet followed by making a catapult, having Root beer float day and finishing up with tye dye t-shirt day.

Everyday I have been hearing...I need $20 for this, I have to turn in $5 for this, I need supplies, we have to provide this for the class and oh wait mom I forgot I need $20 more this morning! Ugggh

Then Jonah started softball a few weeks ago and practices have us spending our evenings at the ball field. This week Jonah and Emeri both started rehearsing for Mulan. So almost every night is full. Don't get me wrong I thoroughly enjoy watching my daughter play softball, I get so excited when she gets out on the field and gives it her all. Also having them both in the summer musical every year is such a wonderful experience and I wouldn't trade it for the world. But let me tell ya this momma is a little bit worn out! :)

I am so ready for school just to be out already and the girls to be home with me. The past couple weeks the girls have just been too busy to cook with me and I am really missing that. So I am looking forward to getting back to it.

Last week we didn't stick to our meal plan at all so this week I decided to go for super simple. Most every night hubby and the kids were barely home before we had to turn around and head off to the ball field.

This week we ate:
Mon. Tacos
Tues. Hot dogs and Mac and cheese
Wed. Bacon and Eggs
Thur. Beans and rice with Turkey Keilbasa
Fri. Grilled Steak and fried potatoes

So it wasn't fancy or spectacular but it was easy, every enjoyed and I managed to stay on task. Hopefully things will go as well next week.

Thankfully this next week there are no ball games but musical rehearsal will be in full force. Here's to hoping I can keep track!

What to Eat When Camping Besides Hot dogs?


That time of year is almost here, time to head out to the great outdoors for a camping trip!

Okay, I must admit, I do NOT camp! Hubby and the girls camp but I do not. The whole outdoor, dirty, bug, kinda thing just doesn't attract me.

But for my Hubby and those of you who do camp what do you eat when you are out there? Hot dogs again!?

In the meantime here is a great basic recipe that is super easy to make and very delicious!!

Roast Corn

Ears of corn (in my family you need 1 per person)
Salt and pepper to taste
Butter to taste
String

Peel ears leaving husks on at bottom and remove corn silk. Replace
husks covering ears and tie around top. Dip corn in salt water. Place
corn on screen over hot coals and turn often until all side are done.
When cooked remove husks and add salt and pepper and margarine.

Life Can be So Busy

Life has been a little on the crazy side around here. End of the school year always seem to do that to us but there have been other things added to the mix this year. It started with the "Inland Hurricane", which didn't cause us any problems but we had family stay with us for 3 days. I was so glad we had power and were able to help.

Then I have 1 daughter who is in softball this year so she is having practice everytime I turn around. Last week we had something every night, between softball, honors night and a birthday party. Then I was busy helping my sister work on her new house on Tuesday and yesterday. We painted both days for hours and there is still a lot to be done. She bought a 5 bedroom, 3 bath that needs some remodel before they move in. Also last week I painted at my house on Wednesday and Thursday.

Tuesday night we will be getting the girls schedule for Musical rehearsals. They are both going to be in the summer production of Mulan and rehearsals will be starting soon.

So I have been a little behind on blogging and we didn't manage to have either of the girls cook last week. As a matter of fact I failed miserably in sticking with my meal plan at all last week.

For this week I tried to make a much simpler meal plan for the week so I am hoping I am able to stick with it and the girls will get to cook this week. We will be very busy this week, Jonah has 3 ball practices and 2 games.

Do you ever have a week where all your best intentions just seem to fall through? What are your strategies to sticking to your meal plan even when you have no time?

HOT Kraft Coupons up to $50 in Savings

Initially I had a little bit of trouble, it kept redirecting me in a circle. Sign in then sign me in then I need to sign in again. After a few times the coupons popped up. I just think the site is a little busy! :)

KFC Not Honoring Their Free Meal Coupons

Just last week the blogosphere was a buzz with the Free 2pc Kentucky Grill Chicken Meal coupons. I personally didn't get a chance to print them, every time I tried I would get an error. I am sure the site was just too swamped with all the smart savvy people out there getting their free coupons.

Well apparently no sooner than this promotion started it ended. Apparently KFC did not realize that when they allowed 4 coupon prints per customer that the customers would print them. Here you can watch a video from the KFC President apologizing for the inconveinence.

Apparently you can get a Rain Check for these coupons. In order to do so go to a local participating KFC and get a Rain check form. Fill that out and attach it to the original coupon and return it to the store manager by May 19th. They will send you a rain check for the free meal at a later date plus you will receive a free pepsi.

I really find this whole thing absurd! Why can't you just go into KFC present the coupon and the Manager write out a rain check right then? I have to say I am glad I could never get the coupons to print of I would have been an unhappy customer.

"Inland Hurricane" hits Southern Illinois

I know I haven't been around the past couple of days and I wanted to take a moment to let you all know why. I headed to Marion Friday morning to have my shopping day. Marion is about 20 miles from where I live. I made it to Target and got a few great deals at Walmart then went to stop by my sisters apartment.


We knew there was a storm coming but hadn't quite realized the magnitude. I was supposed to meet my hubby at work at 12:15 to head to lunch but when I stopped to get gas at about 11:30 the sky was so crazy. I had never seen it look the way it did I can't even describe it. I was terrified as I finished pumping my gas. I called hubby and he said he couldn't leave as he is part of the rescue team at work. So I decided to get on the interstate and get home because my girls were 20 miles away.

Thankfully I got right behind a semi as soon as I got on the interstate or I would have never made it home. About 5 minutes into my drive rain and wind were so heavy that I had almost zero visibility. I could not see the road, all I could see were the little red lights on the back of the semi. All the way home I prayed and cried. Driving only about 35 miles an hour that 20 mile drive seemed to take forever.


I finally got home and turned on the news and oddly enough the storm had calmed to almost nothing. But in a short amount of time a portion of it had whipped around and started going through the same area again. This time it was worse. It produced up to 106 mile an hour straight winds.

In the town I had just left it uprooted trees left and right, knocked over power lines, tore off roofs and left the town in a shambles and a 96% blackout.

My hubby was in that town and so was my sister! My sister and her 4 little one 5 and under were stuck in their apartment and 4 trees had came down on their roof. Thank God that no one was injured! My hubby was stuck in the mall for about an hour, shaken up but thankfully safe.

Thankfully our town got very little damage, we had lots of rain and wind but we have power. Right now my sister and her family are staying with us. Their apartment complex is severely damaged with uprooted trees and power lines.

I thank God that all of my family is safe and that during this whole mess they have only reported 1 death in 3 counties.

Cooking with Jonah: Spiced Roast Chicken

Monday night was Jonah's turn to cook and we were very pressed for time. They get off the bus around 3:20 and she had to be a softball practice by 5:00. During that time she had to practice her trumpet then get dinner ready. So I stepped in and helped a little. A few things were changed to save on time.

She made Spiced Roast Chicken Breast and I made the onions and potatoes.

Here are the ingredients:
* 2 chicken breast halves
* 1 teaspoon chili powder (we used red pepper flakes instead)
* 1/4 teaspoon ground cumin
* 1/4 teaspoon ground coriander
* 1/4 teaspoon black pepper
* 1/8 teaspoon ground cinnamon
* 1 teaspoon salt
* 1 1/2 tablespoons vegetable oil
* 3 tablespoons water



She cut up all the chicken into smaller strips to save on cooking time. Afterwards she mixed all the spices with the oil and rubbed it over the pieces of chicken.


Then she added the rest of the oil to the pot and browned up the meat. Then she transferred the meat to a glass pan and put it in the oven on 450 for about 15 minutes.


Then we served it with some yummy onions and potatoes.


The chicken was quick and easy and the spices were really tasty. The meal was yummy and we barely got done in enough time to get to softball practice.

We will make chicken like this again.

Review: Special K Cinnamon Pecan Cereal


I have been a long time fan of Special K Cereals! Not the original pain Special K but the Blueberry, Strawberry and the Chocolate Delight. Actually the whole family loves them and when I buy a box it dosen't last very long. Since most cereal including Special K is a little high priced I don't buy it that often unless I have a great coupon or the store is running a great sale or both.

So last week when Target had their Special K deal going on I had to get in their and take advantage. I bought 5 boxes, Strawberry, Blueberry, Chocolate Delight, Cinnamon Pecan and Vanilla Almond. I haven't tasted the Vanilla Almond but we opened the Cinnamon Pecan box yesterday and I have to admit the box is gone already!

We all ate some yesterday then the girls had it for breakfast and I decided to have it for lunch. Yeah it is that good! I thought nothing could top the Chocolate Delight until I had my first bowl of Cinnamon Pecan.

I have a great fondness to Cinnamon. I love cinnamon toast, cinnamon rolls, cinnamon cake and I really love Cinnamon Toast Crunch cereal. So I was pretty sure we would like the new Cinnamon Special K but I never imagined the flavor would be so delicious.

The flavor is sweet but it dosen't taste like it is full of sugar. The cinnamony goodness is perfect and the Pecans add a wonderful yummy crunch to the cereal.

I cannot wait until the next Kellogg's deal or until I can get ahold of some more Special K coupons! I will be buying some more of this delicious cereal.

Baking or Cooking for the Freezer and Eating Healthier

Right now my husband and I are working to change our families eating habits. We both need to lose a little more than a few pounds. Our girls are super active and are thin but we don't want them to grow up having bad habits.

We started the day after Easter. We had been on vacation the week before so we figured this would be a great start. First on the list was to make sure I was buying fruits and veggies every week. Next was to cut out soda! This was a crazy one but I can be pretty determined. I was a serious Dr Pepper addict and I am proud to say I haven't had one in 3 weeks. I will confess that last Tuesday night I was not feeling great and I had a Sprite. So 1 soda in 3wks not bad for a soda-holic. The girls are not forbidden from soda but I am just not buying any to bring home. If they go somewhere and want one they can have one.

This last part has been probably the hardest....cutting down on too much processed food. Okay so we are not going to be processed food free but we just wanted to make a conscious effort to bring home less. So we are buying less frozen meals, frozen snacks and such.



So the first thing I needed to do was figure out some lunch ideas for hubby and I. On the 23rd I cooked up a big pot of Pinto Beans and Rice. I just went by the directions on the bag. I added in plenty of seasoning, salt, pepper, etc. I also cooked up a big pot of Lentils and Rice. I separated these individually and put some in the downstairs freezer and some upstairs freezer. In the morning just sit one out to thaw. Later heat up on a tortilla and add lettuce, tomato, salsa, cheese, sour cream or whatever you like.
Last week while I was cooking dinner and was already in the kitchen I decided to start up a batch of Chili. I got it all ready and turned it on simmer then just set the timer for 2 hrs. I divided this into 2 meals. One will be for Chili Dogs this week and the other will go to my Grandparents tomorrow.


Saturday I decided to bake some snacks for the girls. First I premade Peanut Butter and Syrup Sandwiches for the school lunches. 1 Bag is here and the other is in the upstairs freezer.

I used 1 Jar Skippy Natural and mixed it with enough maple syrup to sweeten. Honey also works great but I was out. 1 Jar made 17 sandwiches. They are each individually bagged then are loaded into a ziploc freezer bag.
All they have to do is grab one out in the morning and stick it in their lunch box and by lunch time they have a thawed sandwich.

I also baked 8 dozen Oatmeal muffins. The girls love these, so do hubby and I. I am not a great baker but these are easy.

3 packets Instant Oatmeal
1 cup milk
1 cup self rising flour
1tsp salt
1/2 cup brown sugar
1 egg
1/2 cup oil (use applesauce for healthier version)

Empty oatmeal into a bowl and cover with milk and let sit while you mix other ingredients. In another bowl add flour, salt, brown sugar and mix together. Then add egg, applesauce and milk oatmeal mixture. Blend together. 1 batch makes 12 regular size muffins. Bake at 350 for about 20 minutes. I checked mine at 15. My stove time varied from the recipe.

I made some in muffin pans and some in a square pan and cut them into bars. The flavors I made were, Blueberry, Banana, Strawberry, Strawberry/banana, Cinnamon Swirl, Apples and Cinnamon, Peach. A couple were doubled.
By using skim milk and applesauce in this recipe the muffins came to 100-120 calories a piece.

Needless to say by the time my baking day was over I had lost about 1 1/2 doz of the muffins. Kids and Hub had to taste test most flavors.
We ended up with 3 bags in the freezer and 1 in the fridge. These are great for Breakfast, in the lunch box or after school snack.

My older daughter is adapting to these changes very well my youngest is not. She wants chicken nuggets, frozen pizzas and hot pockets. So I am in search of healthier ways to make similar convenience items at home. If anyone has any bulk freezer recipes on kid approved snack foods I would love to hear them.

Cooking with Emeri: Spicy Chicken Tacos

Emeri cooked on Thursday this week. She made Spicy Chicken Tacos.

Not sure if you see the trend here but my kids love chicken! :)

We made a few changes but you can check out the original recipe here.

You will need:
Salsa
salt
canola oil
Chicken breast
sour cream
green pepper
onion
cilantro (we used dried)
tomato
tortillas
cheese (we used mexican shredded, I had no idea what the other stuff was)


Emeri took the 2 Chicken breasts and chopped them up into small pieces with shears.


She added 1tsp canola to the pan then the chicken and then let it cook.


She began chopping up the vegetables. The tomato onions and pepper.


When the chicken was cooked through she removed from the pan and set it aside in a bowl. She added the other tsp of canola to the pan and the put all the veggies in. We chose to add the tomatoes now rather than not cook them.


After a few minutes she added minced garlic, 1/2 cup salsa and 2 tsp dried cilantro. I thought I had cumin but I didn't.
She added the chicken back in and let it cook for a few minutes.


We used flour tortillas instead of corn.
We filled the warm tortillas with the chicken and veggie mixture and topped with cheese and sour cream. This made 3 tacos for hubby and 2 each for me and the girls.


The tacos were delicious! Everyone loved them although Jonah had to pick out the green peppers. It was really quick and easy to make, I didn't have to help Em with anything. I basically just photographed! :)
