Cooking with Emeri: Chicken Fajitas

Em made Chicken Fajitas on Wednesday night. We made a few changes to the recipe.

We used:

1TBS Extra Virgin Olive Oil
2 Lg Boneless Skinless Chicken Breast
1 onion
1 green pepper
1 pkg Whole Wheat Tortillas
Fajita Seasoning packet
Minced Garlic
Shredded Cheese

She added 1TBS Olive oil to the pan and cooked the chicken breast on each side for about 3 or 4 minutes.

Afterward she took them out of the pan and set them to the side on a plate so she could cut them up. Meanwhile she had already sliced up the onion and green pepper.

She added the sliced up onion to the olive oil already in the pan.

Then she added in the green pepper and let the veggies saute for about 5 minutes.

Next she added in a heaping teaspoon full of minced garlic and let it saute for a minute. Then came the fajita seasoning and the water per the fajita package.

She added in the chunks of chicken breast and covered it with a vented lid. She let it simmer for 30 minutes.

We ate it on warm tortillas with a sprinkle of cheese!

For me this is the best meal she has made so far!! The fajitas were delicious. Jonah picked out the green peppers but otherwise enjoyed the fajitas.
