Cooking with Jonah: Chicken Pesto Pizza

I am just a little behind this week. Jonah did cook Monday night and I forgot to post that night. So I had planed to post Tuesday night and by Tuesday evening I really didn't feel so well. Yesterday I spent the majority of my say in bed and/or sleeping. Today I feel much better and I am trying to get things caught up.

Jonah made a Chicken Pesto Pizza as well as a Chicken and Tomato pizza. A few changes were made to suit our tastes.

Here is what we used for the 2 pizza's. For the original recipe you can go here.

2 12" pizza crusts
3 boneless skinless chicken breasts
can of Hunt's garlic tomato sauce
Classico Pesto with Basil
1 bag shredded Mozzarella
fresh on the vine Tomatoes
Marinated Artichoke Hearts

Jonah started cuttin up the chicken breasts with a pair of shear we use in the kitchen. Afterward she put 2T of Extra Virgin Olive in the pan can cooked the chicken until done.

Meanwhile she added about 1/2 c Pesto to one of the pizza crusts.

Then she added about 1/2 the can of Tomato sauce to the other pizza crust.

Next she drained the artichokes and placed the around the pesto pizza.

The she sliced up 2 small tomatoes and placed them on the other pizza.

After the chicken was cooked through she divided it between the two pizzas.

Finally she put 1 1/2 cup mozzarella on each pizza. I helped her place them in the oven, and put them directly on the rack. They cooked on 45o for about 12 minutes.
Here I was worried about her getting burned and I managed to burn my arm! :)

So how were they?
Well none of us had ever tasted artichokes before so I was a little nervous. Everyone agreed the Pesto Pizza was the best. The Chicken and tomato pizza was good but it didn't even compare to the Chicken and Pesto. We will definitely make this pizza again. Next time I think we will try homemade dough instead.

Cooking with Emeri: Chicken Cacciatore

I am pretty behind this weekend! We have been busy and not home much. I had planned on posting this Friday but it just didn't work out.

Wednesday night Emeri made Chicken Cacciatore for dinner. We did make a few changes!

You will need:
* 3-4 lbs chicken, cut up
* 1/2 cup seasoned flour
* 1/2 cup olive oil
* 2 garlic cloves, diced
* 2 medium onions, separated into rings
* 1 (14 ounce) can diced tomatoes
* 1 (6 ounce) can tomato paste
* 2 green peppers, sliced into rings
* 2 teaspoons salt
* 1 tablespoon oregano
* 1/4 lb mushroom

She actually started with 3 boneless Chicken Breasts. This made plenty to feed our family of 4. In the essence of time she used clean shears to cut up the chicken into bite size pieces.

She then gave them a light dusting with flour. We decided to use 1/4 cup Extra Virgin Olive Oil, 1/2 cup seemed like alot. She added the olive oil to the pan and then lightly browned the chicken on all sides.

She opted to chop the onion and green peppers into large chunks. Once the chicken was ready she added in the onion.

...and the Green Pepper. We decided to only use one of each instead of 2.

She then added in all the other ingredients. We omitted the mushrooms because I can't stand them.

She let it simmer for 30 minutes. The time was less because we used chicken chunks.

She made 4 servings of white rice and then plated the Chicken Cacciatore over the rice.

It was really good!! After then 30 minutes the veggies were slightly al dente but I prefer that over mushy.

The flavor was so delicious and it was very easy for her to make. I will be saving this recipe to use again.

Kmart Super Double Coupons in Southern Illinois

I had read last week on blog after blog that Kmart Doubles would be sweeping the nation again this week. I managed to find the info on a few of these blogs giving States and Cities that would be participating. Everything I read said that West Frankfort Illinois would be a part of the Kmart Doubles. Then when I got my Sunday paper the ad said nothing about it. Usually they have this big bright red super double ad on the front page. Mine had nothing!

So I went to and searched the weekly ad for West Frankfort Illinois and sure enough it shows me the above ad. Exactly like the one we got but it has the bright red Super Double section.

I had planned on calling Kmart sooner but I just got off the phone with one of the managers about 10 minutes ago and she confirmed they are doing the Super Coupon Doubles this week. Up to $2.

I will for sure be heading there to shop on Friday!

Cooking with Jonah: BBQ Pork Sandwiches

Things did not turn out as planned this week. Originally Jonah had chosen Crockpot BBQ Pork Sandwiches and homemade fries.

So I had my alarm set for 6 so Jonah could get the pork tenderloin and the bbq sauce in the crockpot, except I actually set if for 6pm so it didn't go off. Hubby woke me up at 6:45 with only 15 minutes until the girls walk out for the bus. Needless to say we forgot the pork.

After she left I remembered and figured I better get it in or we wouldn't have dinner tonight. So no pictures of the process of dumping a 1lb Pork tenderloin in the crockpot.

Here is what we used. There are 4 in our family.
1lb Pork Tenderloin
1/2 bottle of Honey BBQ Sauce

You can get the original recipe here. I cooked on low for 6hrs but mine was not falling apart. So I put it on high for 2 more hours.

Jonah came home and was very upset with me that I cooked it without her. (not good) Anyway, she made some frozen corn and a Knorr's Pasta side to go with the sandwiches.

1lb Tenderloin made 7 sandwiches and as you can see they are not piled high. We are really working on portion control right now. Hubby and the kids had 2 sanwiches each and I had 1. If you have a bigger family or want leftover you will need a bigger tenderloin.

The meal was great, everyone loved it. It was a nice change as we don't buy pork very often.
When I bought the meat I actually bought a 2 lb tenderloin and the other pound is in the freezer for a day when I don't have time to cook in the evening. This meal was super easy!

I had a great shopping trip to CVS today and I will for sure be heading back over tomorrow. I am hoping to stock up on Tresemme, get the freebies and 2 bottles of Act for my youngest.

Shopping April 10th through 16th

This week was the beginning of a new payday and a new $200. My budget is $200 bi-weekly for all groceries, household supplies, personal care supplies and dog food.

I made this trip the day after we got home from Memphis and it was a long day. The girls and I also had to shop for last minute Easter Dresses and we were gone like 6hrs. I cannot find my receipts. I pretty much shopped from my list, getting the items needed to complete the next weeks meals and fresh fruits and veggies. I also used hardly any coupons.

At Kroger I spent $51.85 (had to check my bank records)
At Walmart I spent $20, part of it was that $8 chocolate cake that I was too tired to make to take to Easter dinner.

Not pictured was a quick trip to Walgreens. They were out of everything!

Cooking with Emeri: Chicken Fajitas

Em made Chicken Fajitas on Wednesday night. We made a few changes to the recipe.

We used:

1TBS Extra Virgin Olive Oil
2 Lg Boneless Skinless Chicken Breast
1 onion
1 green pepper
1 pkg Whole Wheat Tortillas
Fajita Seasoning packet
Minced Garlic
Shredded Cheese

She added 1TBS Olive oil to the pan and cooked the chicken breast on each side for about 3 or 4 minutes.

Afterward she took them out of the pan and set them to the side on a plate so she could cut them up. Meanwhile she had already sliced up the onion and green pepper.

She added the sliced up onion to the olive oil already in the pan.

Then she added in the green pepper and let the veggies saute for about 5 minutes.

Next she added in a heaping teaspoon full of minced garlic and let it saute for a minute. Then came the fajita seasoning and the water per the fajita package.

She added in the chunks of chicken breast and covered it with a vented lid. She let it simmer for 30 minutes.

We ate it on warm tortillas with a sprinkle of cheese!

For me this is the best meal she has made so far!! The fajitas were delicious. Jonah picked out the green peppers but otherwise enjoyed the fajitas.

I have saved this recipe on my computer, I will be making it again!

Cooking with Jonah: Burrito Casserole

Tonight Jonah made Burrito Casserole!

Here are the ingredients:

8 small (fajita-size) flour tortillas
2 cups refried beans
2 tablespoons canola oil
1/2 small red onion, diced
1 1/2 pounds ground beef
1 1/2 cups store bought salsa (medium for a spicier taste)
Optional: 1 minced fresh jalapeno pepper
1 1/2 cups cheddar cheese

We made a couple of changes.

We used only 1lb of ground turkey. Here Jonah is browning it with the onion and canola oil. When we make this again we will omit the canola oil.

She layered 3 of the tortillas in the 9X13 pan and cut the other 5 into slices. We used Baja Low Carb Whole Wheat Tortillas

After the meat was browned she added in the 1 1/2 cups of salsa.

Jonah spread the can of refried beans over the tortillas.

Next came the meat/salsa mixture which she also spread across the bottom of the pan.

Then she layered on her tortilla strips.

She sprinkled on 1 1/2 cups of Mexican Cheese and put the pan in the oven for 15 minutes on 350.

The Casserole was FABULOUS!

It was a crowd pleaser. Everyone in the house loved it. I am sure there are many substitutions you could make.
